Abstract
The purpose of this research is was to know the influence of roasting time and temperature on decaffeination level of Libtukom coffee. Research is organized within the Group Random Factorial with the treatment temperature and time of roasting. First treatment temperature in three degrees of treatment i.e. 50oC, 60oC, and 70oC. The second treatment is time of roasting consist of four levels of treatment i.e. 70-minute, 90 minutes, 110 minutes long, and 130 minutes. The results showed that temperatures and time not effect on caffeine levels. But caffeine levels of yield decline of decaffeination caffeine levels in coffee Libtukom.
