Abstract

Analisis Komparasi Nilai Tambah Agroindustri Kopi Liberika dan Kopi Luwak Liberika Bubuk di Kelurahan Mekar Jaya Kecamatan Betara Kabupaten Tanjung Jabung Barat Lia Elianty1) A Rahman2) Adlaida Malik2) 1)Alumni Program Studi Agribisnis Fakultas Pertanian Universitas Jambi 2)Staf Pengajar Jurusan Agribisnis Fakultas Pertanian Universitas Jambi Email : liaelianty123@gmail.com ABSTRAK Penelitian ini bertujuan untuk (1) Mendeskripsikan gambaran umum agroindustri Kopi Liberika dan Kopi Luwak Liberika. (2) Menganalisis nilai tambah yang dihasilkan kedua agroindustri. (3) Membandingkan nilai tambah yang dihasilkan kedua agroindustri. Metode analisis data yang digunakan adalah metode deskriptif kuantitatif. Metode deskriptif digunakan untuk mendeskripsikan gambaran umum masing-masing agroindustri, sedangkan untuk menghitung nilai tambah digunakan metode Hayami dan untuk membandingkan rata-rata nilai tambah yang dihasilkan digunakan uji satu arah. Data pengamatan yang digunakan adalah data rata-rata 10 kali proses produksi pada kedua agroindustri selama periode bulan Mei-Juli tahun 2021. Hasil penelitian menunjukkan (1) Kegiatan pengolahan kopi dimulai dari sortir green bean, penyangraian, pendinginan green bean, penggilingan, pendinginan kopi bubuk dan pengemasan. Rata-rata bahan baku yang digunakan dalam satu kali produksi pada agroindustri Kopi Liberika adalah 9,7kg green bean sedangkan Kopi Luwak Liberika adalah 7,2kg green bean. Kedua agroindustri mampu mengolah kopi green bean lebih dari jumlah bahan baku yang digunakan, karena kapasitas mesin penyangrai kopi yang digunakan kedua agroindustri bisa mencapai 8kg sampai 12 kg green bean. Harga output kopi liberika sebesar Rp. 250.000/kg sedangkan kopi luwak liberika sebesar Rp. 270.000/kg. (2) Rata-rata nilai tambah yang diperoleh agroindustri Kopi Liberika dan Kopi Luwak Liberika untuk setiap kg bahan baku sebesar Rp. 136.549,50 dan Rp. 149.947,00. (3) Hasil uji satu arah menunjukkan bahwa rata-rata nilai tambah yang diperoleh agroindustri Kopi Luwak Liberika lebih tinggi dibandingkan dengan nilai tambah yang diperoleh agroindustri Kopi Liberika dengan selisih nilai tambah sebesar 10%. Kata Kunci : Agroindustri Kopi, Nilai Tambah, Komparasi ABSTRACT This research aimed to 1) Describe the general description of the Liberika Coffee and Luwak Coffee agroindustry, 2) Analyze the value-added produced by the two agro-industry. 3) Analyze the comparison of added value produced by the two agro-industry. The data analysis method used is descriptive quantitative method. Descriptive method is used to describe the general description of each agro-industry, to calculate value-added the Hayami method is used and to compare the average added value produced, one-way test is used. Observational data used is 10 times the production process in both agroindustry during the period May-July 2021. The results show 1) Coffee processing activities start from green bean sorting, roasting, cooling green beans, grinding, cooling ground coffee and packaging. The average raw material used in one production of Liberika Coffee agroindustry is 9.7 kg green beans, while Liberika Luwak Coffee is 7.2 kg green beans. The two agro-industry are able to process green bean coffee more than the amount of raw materials used, because the capacity of the coffee roasting machine used by the two agro-industry can reach 8 kg to 12 kg green beans. The output price of liberica coffee is Rp. 250.000/kg while Liberika civet coffee is Rp. 270,000/kg. (2) The average added value obtained by the Liberika Coffee and Luwak Coffee agroindustry for each kg of raw materials is Rp. 136,549.50 and Rp. 149,947.00. 3) The one-way test results show that the average value-added obtained by the Liberika Luwak Coffee agroindustry is higher than the value-added obtained by the Liberika Coffee agroindustry with a difference in value-added of 10%.
