Abstract

ABSTRAK — Penelitian ini berujuan untuk merancang, membuat, dan menguji alat kristalisasi PKO. Pelaksanaan penelitian terbagi dalam tiga tahapan, yaitu perancangan, pembuatan alat dan pengujian alat, hingga dihasilkan bentuk dan dimensi alat yang paling efektif dan optimal untuk kristalisasi dan fraksinasi PKO. Alat kristalisasi untuk fraksinasi PKO yang dirancang pada penelitian ini terdiri dari wadah air (box plastik), peltier headsink dan kipas untuk sumber suhu dingin, pompa air mini, dan water blok untuk mensirkulasikan suhu dingin yang dihasilkan dari peltier, dan power suply untuk mengubah tegangan listrik AC-DC. Pengujian meliputi uji kinerja mengkristalisasi PKO pada 3 rezim pengujan (Pendinginan awal, pendinginan kritis, dan pendinginan konstan). Kinerja alat kristalisasi PKO ini dilakukan juga pada beberapa volume PKO (200, 400, dan 600 ml). Hasil penelitian menunjukkan laju pendinginan lemak pada pendinginan awal atau pendinginan cepat 2,05 °C/menit, Laju pendinginan kritis ± 0,0925 °C/menit, waktu kristalisasi dapat di pertahankan pada suhu 21 °C. Kapasitas alat adalah 600 ml. Kata kunci: Alat kristalisasi PKO, fraksinasi, elemen peltier. ABSTRACT — This study aims to design, manufacture, and test the PKO Fractionation tool, namely the design stage, the tool-making stage and the tool- testing stage which are determined by trial and error. The stage of making this tool uses the trial and error method, to produce the most effective and optimal shape and dimensions of the tool for PKO fractionation. The fractionation device designed in this study consisted of a water container (plastic box), Peltier headsink and a fan for cold temperature sources, a mini water pump and water block to circulate the cold generated from the Peltier, and a power supply to change the AC-DC voltage. The stages of making the prototype are carried out based on the technical drawings of the detailed design results that have been produced. The working stages of prototyping are divided into two stages, namely the manufacture of each component and assembling the components into a single unit of the desired tool. The testing phase includes performance testing and tool capability testing. From the results of the study the rate of cooling of the fat in the initial cooling or rapid cooling is 2.05 °C/minute, the critical cooling rate is ± 0.0925°C/min, the timing can be maintained at a temperature of 21 °C.
