Abstract
The purpose of this study was to determine the effect of citric acid in anthocyanin extraction of hibiscus flowers. This study was conducted using a completely randomized design consisting of 5 levels of citric acid treatment, namely 0%, 3%, 5%, 7%, and 9%. The data were analyzed using the Analysis of Variance (ANOVA) and then followed by the Duncan Multiple Range Test (DMRT) at the 95% confidence level. The results show that the use of citric acid had a significant effect on yield, pH, color, and anthocyanin concentrations. 9% citric acid treatment was the best treatment with a yield of 75.12%; pH 3.23; L 40.33; A 58.00; B 30.33 with a description of dark red color and anthocyanin content of 135.04 (mg cyaniding 3- glucoside / 100 g of material).
