Abstract
RINGKASAN Pasar adalah salah satu lokasi tempat pemasaran Telur Itik yang kemungkinan bias menurunkan kualitas fisik dan mempengaruhi cemaran bakteri. Tujuan penelitian ini adalah untuk mengetahui kualitas fisik dan cemaran bakteri dari Telur Itik yang di jual di Pasar Tradisional Kotamadya Jambi. Penelitian ini dilaksanakan di Laboratorium Fakultas Peternakan Universitas Jambi dimulai dari 10 Januari sampai dengan 14 Februari 2021. Perlakuan dalam penelitian ini adalah Pasar Tradisional Keluarga (PK), Pasar Tradisional AurDuri (AD), dan Pasar Tradisional Talang Banjar (TB). Dengan frekuensi 6 kali dan diambil sekali seminggui Jumlah keseluruhan sampel Telur Itik selama penelitian sebanyak 216 butir. Rancangan penelitian yang digunakan adalah Rancangan Acak Lengkap (RAL) dengan 3 perlakuan dan 6 kali pengulangan. Peubah yang diamati yaitu Nilai Haugh Unit, Nilai pH Putih dan Kuning Telur Itik, Jumlah bakteri pada Telur Itik. Analisis yang diperoleh pada penelitian ini adalah Analisis Ragam (ANOVA). Hasil penelitian menunjukkan bahwa Pasar Tradisional Talang Banjar, Keluarga dan AurDuri untuk nilai Haugh Unit Telur berturut-turut 84,30, 83,61, dan 83,17, nilai pH Putih Telur Itik 8,41, 8,36, dan 8,28, nilai pH Kuning Telur Itik 6,68, 6,49, dan 6,40. Jumlah bakteri berturut-turut 4,6x106 , 4,8x106, 4,7x106 nilai bakteri Telur Itik melebihi batasan maksimum cemaran mikroba. Dari hasil penelitian ini dapat dsipulkan bahwa Kualitas Fisik Telur Itik yang dijual di Pasar Tradisional Kotamadya Jambi yaiu Pasar Talang Banjar, Pasar Keluarga, Pasar Aur Duri memiliki kualitas yang baik di lihat dari hasil yang telah di analisis nilai Haugh Unit, pH Putih Telur, pH Kuning Telur masih dalam katagori segar. Dan nilai bakteri melebihi batas maksimum. Summary The market is one of the locations where duck eggs are marketed which may reduce physical quality and affect bacterial contamination. The purpose of this study was to determine the physical quality and bacterial contamination of duck eggs sold at the Jambi Municipal Traditional Market. This research was conducted at the Laboratory of the Faculty of Animal Husbandry, Jambi University starting from January 10 to February 14, 2021. The treatments in this study were the Family Traditional Market (PK), AurDuri Traditional Market (AD), and Talang Banjar Traditional Market (TB). With a frequency of 6 times and taken once a week. The total number of samples of duck eggs during the study was 216 items. The research design used was a completely randomized design (CRD) with 3 treatments and 6 repetitions. The observed variables were the Haugh Unit Value, pH Value of Duck Egg White and Yolk, Number of bacteria in Duck Eggs. The analysis obtained in this study is Analysis of Variety (ANOVA). The results showed that the Talang Banjar Traditional Market, Keluarga and AurDuri for the Haugh value of the Egg Unit were 84.30, 83.61, and 83.17, respectively, the pH value of Duck Egg White was 8.41, 8.36, and 8.28. , the pH value of Duck Egg Yolk is 6.68, 6.49, and 6.40. The number of bacteria, respectively, was 4.6x106, 4.8x106, 4.7x106, the bacterial value of Duck Eggs exceeded the maximum limit of microbial contamination. From the results of this study it can be concluded that the Physical Quality of Duck Eggs sold in Jambi Municipal Traditional Markets, namely Talang Banjar Market, Family Market, Aur Duri Market has good quality in view of the results that have been analyzed the Haugh Unit value, Egg White pH, pH Egg yolks are still in the fresh category. And the value of bacteria exceeds the maximum limit.
