Abstract

ABSTRAK – Penelitian ini dilakukan untuk mengetahui proses produksi di Belibis Coffee di desa Giri Mulyo, untuk mengevaluasi penerapan CPPB pada Belibis Coffee dan memberikan usulan rekomendasi perbaikan yang dapat dilakukan/diterapkan di Belibis Coffee. Data yang digunakan dalam penelitian ini adalah data primer dan data sekunder. Metode penelitian yang digunakan adalah penelitian deskriptif dengan RCA (Root Cause Analysis) Tools 5 why. Berdasarkan hasil penelitian menunjukkan proses produksi kopi bubuk dimulai dari penyortiran buah, perimbangan, penjemuran, pengupasan kulit, sortasi, penyangraian (Roastin), pendinginan biji sangrai, penghalusan/penggilingan biji kopi, pengayakan dan pengemasan. Dari hasil evaluasi persyaratan CPPB menunjukkan 71,14% terpenuhi dan 28,85% tidak terpenuhi. Hasil penilaian IRTP menunjukkan di level 4 dengan jumlah minor 0, mayor 2, serius 5 dan kritis 5. Rekomendasi perbaikan yang diberikan kepada pihak Belibis Coffee yaitu melengkapi fasilitas IRT, membuat jadwal piket kegiatan pembersihan, membuat peraturan untuk karyawan, mengikuti penyuluhan keamanan pangan (PKP), dan memasang poster peringatan untuk karyawan. Kata kunci : CPPB, Belibis Coffee, RCA, 5 WHY ABSTRACT – This study was conducted to determine the production process at Belibis Coffee in Giri Mulyo village, to evaluate the application of CPPB to Belibis Coffee and to provide recommendations for improvements that can be made / applied in Belibis Coffee. The data used in this study are primary data and secondary data. The research method used is descriptive research with RCA (Root Cause Analysis) Tools 5 why. Based on the results of the research, the production process of ground coffee starts from fruit sorting, balancing, drying, skin peeling, sorting, roasting (Roastin), cooling roasted beans, grinding / grinding coffee beans, sifting and packaging. From the results of the evaluation of the CPPB requirements, it shows that 71.14% are fulfilled and 28.85% are not fulfilled. The results of the IRTP assessment show that at level 4 with a number of minor 0, mayor 2, serious 5 and critical 5. Recommendations for improvement given to Belibis Coffee are completing IRT facilities, making picket schedules for cleaning activities, making regulations for employees, attending food safety counseling ( PKP), and put up warning posters for employees.
