Abstract

ABSTRAK- Penelitian ini bertujuan untuk mengetahui pengaruh lama fermentasi terhadap karakteristik fisik dan kimia bubuk kopi liberika, dan mengetahui lama fermentasi yang menghasilkan bubuk kopi terbaik pada kopi liberika. Penelitian ini menggunakan Rancangan Acak Kelompok (RAK) dengan perlakuan lama fermentasi yang terdiri dari 5 taraf, F0=Tanpa fermentasi, F1=12 jam, F2=24 jam, F3=36 jam, dan F4=48 jam. Parameter uji yang dilakukan meliputi kadar air, kadar abu, Nilai pH, Total fenol, Total Flavonoid, dan Aktivitas Antioksidan. Hasil analisis dengan perlakuan terbaik terdapat pada perlakuan lama fermentasi 48 jam dengan warna L* (31,71), a* (14,52), b* (24,07), Kadar Air (2,17), Kadar Abu (3,42), Nilai pH (6,28), Total Fenol (48,03), Total Flavonoid (43,85), dan Aktivitas Antioksidan (66,26). ABSTRACT- This study aims to determine the effect of fermentation time on the physical and chemical characteristics of Liberika coffee powder, and to determine the fermentation time that produces the best coffee powder in Liberika coffee. This study used a randomized block design (RBD) with fermentation duration consisting of 5 levels, F0 = without fermentation, F1 = 12 hours, F2 = 24 hours, F3 = 36 hours, and F4 = 48 hours. The test parameters performed included moisture content, ash content, pH value, total phenols, total flavonoids, and antioxidant activity. The results of the analysis with the best treatment were found in the 48-hour with the color L* (31.71), a* (14.52), b* (24.07), Moisture Content (2.17), Ash Content (3.42), pH Value (6.28), Total Phenol (48.03), Total Flavonoids (43.85), and Antioxidant Activity (66.26).
