Abstract
ABSTRAK - Penelitian ini bertujuan untuk mengetahui konsentrasi etanol dalam proses pemurnian lesitin dari fosfolipid kasar hasil separasi lipid dari serat sawit terhadap kualitas rendemen PC (lesitin larut etanol ) yang dihasilkan. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 4 taraf perlakuan konsentrasi etanol (0%, 84%, 90%, 96%) dengan 6 kali pengulangan sehingga didapat 24 satuan percobaan. Parameter yang diamati yaitu rendemen, bilangan asam, Acetone Insoluble (AI), Toluene Insoluble (TI), derajat warna dan kadar air. Data yang diperoleh akan dianalisis menggunakan ANOVA dengan taraf 1% dan 5%. Apabila perlakuan menunjukkan pengaruh nyata, maka akan dilakukan uji lanjut menggunakan Duncan’s Multiple Range Test (DMRT) pada taraf 5%. Hasil penelitian menunjukkan bahwa konsentrasi etanol dalam proses pemurnian lesitin (ethanol soluble) dari serat sawit memberikan pengaruh nyata terhadap bilangan asam, dan derajat warna lesitin (ethanol soluble) namun pada rendemen, kadar air, nilai AI dan TI menunjukan tidak berpengaruh nyata. Perlakuan konsentrasi etanol terbaik yang menghasilkan lesitin (ethanol soluble) dengan kualitas memenuhi standar mutu lesitin yaitu konsentrasi 84% yang memiliki nilai rendemen sebesar 8,52%, bilangan asam 5,68 mgKOH/g, AI 54,03 %, TI 0,27 %, derajat warna (L* 18.50, a* 20.33, b* 21.67, very dark orange) dan kadar air 22,63 %. Kata Kunci - Lesitin, serat kelapa sawit, pemurnian lesitin, larut etanol, o/w ABSTRACT- This research was conducted to determine the concentration of ethanol in the purification process of lecithin from crude phospholipids resulting from the separation of lipids from palm fiber on the quality of the yield of PC (ethanol-soluble lecithin) produced. This study used a completely randomized design (CRD) with 4 treatment levels of ethanol concentration (0%, 84%, 90%, 96%) with 6 repetitions to obtain 24 experimental units. Parameters observed were yield, acid number, Acetone Insoluble (AI), Toluene Insoluble (TI), color degree and water content. The data obtained will be analyzed using ANOVA with a level of 1% and 5%. If the treatment shows a significant effect, further tests will be carried out using Duncan's Multiple Range Test (DMRT) at the 5% level. The results showed that the concentration of ethanol in the process of refining lecithin (ethanol soluble) from palm fiber had a significant effect on the acid number and degree of color of lecithin (ethanol soluble) but the yield, water content, AI and TI values showed no significant effect. The best ethanol concentration treatment that produces lecithin (ethanol soluble) with quality that meets the lecithin quality standard is a concentration of 84% which has a yield value of 8.52%, acid number 5.68 mgKOH/g, AI 54.03%, TI 0.27 %, color degree (L* 18.50, a* 20.33, b* 21.67, very dark orange) and 22.63 % water content.
