Abstract
ABSTRACT This research aims to (1) describe the general picture of the Salacca agro-industry (2) analyze the added value of salak after being processed into salak dodol, salak chips and salak dates (3) analyze the comparison of the Revenue Cost Ratio and income of salak dodol, salak chips and salak dates. The research method used is through direct interviews with respondents, the data collection method used is primary and secondary data collection and the data analysis used is quantitative descriptive analysis using the hayami method and Revenue Cost Ratio. This research was carried out in the Salacca agorindustry, West Angkola District, South Tapanuli Regency. The results of the research show that (1) the Salacca agro-industry processes snake fruit into processed salak products, namely salak dodol, salak chips and salak dates (2) Processing salak fruit into salak dodol, salak chips and salak dates produces added value, namely Rp. 12,110 each. per kg of raw materials (45.66%), snake fruit chips IDR 21,004 per kg of raw materials (53.86%) and snake fruit dates, namely IDR 8,400 per kg of raw materials (43.08%) (3) the three processed products of snake fruit are dodol snake fruit, snake fruit chips and snake fruit dates are profitable and marketable. Salak chips generate the highest income compared to snake fruit dodol and snake fruit dates. Keywords: Salak, Added Value, Processing ABSTRAK Penelitian ini bertujuan untuk (1) mendeskripsikan gambaran umun agroindustri Salacca (2) menganalisis nilai tambah salak setelah diolah menjadi dodol salak, keripik salak dan kurma salak (3) menganalisis perbandingan Revenue Cost Ratio dan pendapatan dodol salak, keripik salak dan kurma salak. Metode penelitian yang digunakan adalah melalui wawancara secara langsung ke responden, metode pengumpulan data yang digunakan adalah pengumpulan data primer dan sekunder serta analisis data yang digunakan adalah analisis deskriptif kuantitatif dengan menggunakan metode hayami dan Revenue Cost Ratio. Penelitian ini dilaksanakan di agorindustri Salacca Kecamatan Angkola Barat Kabupaten Tapanuli Selatan. Hasil penelitian menunjukkan bahwa (1) agroindustri Salacca mengolah buah salak menjadi produk olahan salak yaitu dodol salak, keripik salak dan kurma salak (2) Pengolahan buah salak menjadi dodol salak, keripik salak dan kurma salak menghasilkan nilai tambah yaitu masing-masing yaitu Rp 12.110 per kg bahan baku (45,66%), keripik salak Rp 21.004 per kg bahan baku (53,86%) dan kurma salak yaitu Rp 8.400 per kg bahan baku (43,08%) (3) ketiga produk olahan salak yaitu dodol salak, keripik salak dan kurma salak mendapatkan keuntungan dan layak dipasarkan. Keripik salak memnghasilkan pendapatan tertinggi dibandingkan dodol salak dan kurma salak. Kata Kunci : Salak, Nilai Tambah, Pengolahan
