Abstract

ABSTRAK – Di Indonesia, selama ini biji teh merupakan produk samping dari tanaman teh, yang umumnya hanya digunakan untuk pembibitan, maka saat ini biji teh yang dihasilkan dari tanaman teh yang diliarkan hanya terbuang begitu saja sebagai limbah. Ampas biji teh merupakan limbah dalam bentuk padatan dari hasil ektraksi minyak biji teh dan tidak digunakan lagi dalam pembuatan minyak biji teh. Padahal ampas biji teh dapat diolah sebagai bahan baku seperti pati. Penelitian ini betujuan untuk mengetahui karakteristik dan perbedaan sifat fisikokimia ampas pati biji teh dan mengengetahui mutu pati terbaik antara pati ampas biji the kayu aro kerinci dan sidamanik medan. Pati didapatkan melalui proses ekstraksi dengan memakai pelarut (akuades) untuk mengeluarkan kandungan pati. diikuti analisis fisikokimia yang meliputi rendemen, kehalusan, derajat putih, kadar air, kadar abu, kadar pati, pH. Hasil penelitian menunjukan bahwa pati biji teh kayu aro kerici dan sidamanik medan memiliki kualitas yang cukup baik. Hal ini ditunjukan dari hasil penelitian menunjukkan rendemen pati biji teh kayu aro kerinci dan sidamanik medan masing-masing 6,28 % dan 5,19 %, kehalusan 94,1 % dan 97,4 %, derajat putih 77 dan 83, kadar air 11,8 % dan 12,2 %, kadar abu 0,32 % dan 0,32 %, kadar pati 47,12 % dan 47,86 %, pH 5,56 dan 3,97. Berdasarkan uji t (uji independent sample t-test) pada parameter rendemen, kehalusan, kadar air, kadar abu, kadar pati dari kedua sampel pati tersebut tidak terdapat perbedaan yang signifikan. pada parameter derajat putih dan pH terdapat perbedaan yang signifikan. Berdasarkan hasil penentuan mutu pati terbaik, pati ampas biji teh sidamanik medan memiliki mutu yang lebih baik dibandingkan dengan pati ampas biji teh kayu aro kerinci. Kata kunci: Karakteristik Sifat Fisikokimia, Biji teh, Ampas, Pati ABSTRACT – In Indonesia, so far tea seeds are a by-product of tea plants, which are generally only used for breeding, so currently tea seeds produced from wild tea plants are just thrown away as waste. Tea seed dregs are waste in solid form from the extraction of tea seed oil and are no longer used in making tea seed oil. Even though tea seed dregs can be processed as raw materials such as starch. This research aims to determine the characteristics and differences in the physicochemical properties of tea seed dregs and to determine the best starch quality between the dregs of Aro Kerinci and Sidamanik Medan tea dregs. Starch is obtained through an extraction process using a solvent (distilled water) to remove the starch content. followed by physicochemical analysis which includes yield, fineness, whiteness, water content, ash content, starch content, pH. The results of the research showed that the starch of Kayu Aro Kerici and Sidamanik Medan tea seeds had quite good quality. This is shown by the results of the research showing that the starch yield of Aro Kerinci and Sidamanik Medan wood tea seeds was 6.28% and 5.19% respectively, fineness was 94.1% and 97.4%, whiteness was 77 and 83, water content was 11. .8% and 12.2%, ash content 0.32% and 0.32%, starch content 47.12% and 47.86%, pH 5.56 and 3.97. Based on the results of determining the best starch quality, Medan Sidamanik tea dregs starch has better quality compared to Kayu Aro Kerinci tea dregs starch.
