Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh pada konsentrasi gliserol terhadap karakteristik edible film buah nipah dan mengetahui konsentrasi gliserol terbaik yang dapat diaplikasikan dalam pembuatan edible film. Penelitian ini dilaksanakan dengan menggunakan rancangan acak lengkap (RAL) dengan 4 perlakuan konsentrasi gliserol (%/bb) dan 5 ulangan sehingga diperoleh 20 satuan percobaan. Parameter yang diamati yaitu kuat tarik, elongasi, WVTR, kelarutan, ketebalan, dan transparansi. Data yang didapatkan dianalisa secara statistik menggunakan analisa ragam pada taraf 1% dan 5%, data kuat tarik dan elongasi dianalisa secara deskriptif dengan cara menampilkan data hasil penelitian yang disajikan dalam bentuk kurva/grafik. Berdasarkan penelitian yang telah dilakukan dapat diambil kesimpulan bahwa pengaruh konsentrasi gliserol pada perlakuan 1%, 2%, 3% dan 4% berpengaruh nyata secara signifikan terhadap nilai kuat tarik, kelarutan, ketebalan, dan transparansi, namun tidak berpengaruh nyata pada nilai elongasi dan WVTR. Konsentrasi gliserol yang menghasilkan edible film terbaik terdapat pada konsentrasi 1% dengan nilai kuat tarik 0,674 MPa, elongasi 56,575%, WVTR 65,795 g/m2.jam, kelarutan 40,666%, ketebalan 0,072 mm, dan transparansi 2.535%/mm. This research aims to determine the effect of glycerol concentration on the characteristics of palm fruit edible film and to determine the best glycerol concentration that can be applied in making edible film. This research was carried out using a completely randomized design (CRD) with 4 treatments of glycerol concentration (%/bb) and 5 replications to obtain 20 experimental units. The parameters observed were tensile strength, elongation, WVTR, solubility, thickness and transparency. The data obtained were analyzed statistically using analysis of variance at levels of 1% and 5%, tensile strength and elongation data were analyzed descriptively by displaying the research data presented in the form of curves/graphs. Based on the research that has been carried out, it can be concluded that the effect of glycerol concentration in the 1%, 2%, 3% and 4% treatments has a significant real effect on the values of tensile strength, solubility, thickness and transparency, but has no real effect on the elongation and WVTR values. . The glycerol concentration that produces the best edible film is at a concentration of 1% with a tensile strength value of 0.674 MPa, elongation of 56.575%, WVTR of 65.795 g/m2.hour, solubility of 40.666%, thickness of 0.072 mm, and transparency of 2,535%/mm.
