Abstract

ABSTRAK – Penelitian ini bertujuan untuk mengetahui zat pemanis aspartam yang terkandung pada es buah kristal rasa mangga di Mendalo Darat, Kecamatan Jambi Luar Kota, Provinsi Jambi dan untuk melihat apakah aspartam dalam es buah kristal rasa mangga mengikuti pedoman Badan Pengawas Obat dan Makanan. Jenis penelitian ini bersifat deskriptif, pengambilan sampel dengan teknik purposive sampling. Dan diperoleh jumlah sampel yaitu 8.penelitian ini menggunakan alat spektrofotometri UV-Visible. Dilakukan validasi metode analisis yang meliputi linieritas, limit deteksi, limit kuantifikasi, presisi, dan sensitivitas. Penelitian ini menghasilkan persamaan garis kurva standar Y = 15,262x + 0,0075. Sensitivitas serta presisi yang dihasilkan cukup tinggi, dengan limit kuantifikasi sebesar 11,97x10-3 mol/L dan limit deteksi sebesar 3,59x10-3 mol/L. Kandungan aspartam yang dianalisis dalam minuman es buah rasa mangga dengan metode yang telah divalidasi memperlihatkan kandungan tertinggi yaitu 309,58 mg/mL untuk sampel dengan kode M1 dan kandungan aspartam terendah yaitu 71,73 mg/mL untuk sampel dengan kode M6. Kata kunci : aspartam, es buah, spektrofotometri UV-Visibel ABSTRACT – This research aims to determine the aspartame sweetener contained in crystal fruit ice in Mendalo Darat, Jambi Luar Kota District, Jambi Province and to see whether the aspartame in crystal fruit ice follows the guidelines of the Food and Drug Supervisory Agency. This type of research is descriptive, sampling using purposive sampling technique. And the number of samples obtained was eight. This research used UV-Visible spectrophotometry. Validation of analytical methods was carried out including linearity, detection limit, quantification limit, precision and sensitivity. This research produces the standard curve line equation Y = 15.262x + 0.0075. The resulting sensitivity and precision are quite high, with a quantification limit of 11.97x10-3 mol/L and a detection limit of 3.59x10-3 mol/L. The aspartame content analyzed in crystal fruit ice drinks using a validated method showed the highest content, namely 309.52 mg/mL for samples with code M1 and the lowest aspartame content, namely 71.73 mg/mL for samples with code M6.
