Abstract
Abstrak – Penelitian ini bertujuan untuk mengetahui pengaruh dan perlakuan terbaik dari penambahan variasi konsentrasi gum arab terhadap karakteristik bubuk ekstrak bunga telang. Penelitian ini menggunakan metode Rancangan Acak Lengakp (RAL), dengan 5 taraf perlakuan variasi konsentrasi gum arab (5%, 10%, 15%, 20%, dan 25%). Sampel diulang sebanyak 4 kali sehingga diperoleh 20 satuan percobaan. Analisis data dilakukan dengan menggunakan analisis sidik ragam ANOVA pada taraf 5% untuk mengetahui pengaruh antar perlakuan. Apabila diperoleh data yang berpengaruh nyata, maka dilanjutkan dengan uji Duncan’s New Multiple Range Test (DNMRT) taraf 5%. Hasil penelitian menunjukkan bahwa perlakuan terbaik didapatkan pada konsentrasi gum arab 15% dengan nilai rendemen 73.16%, kadar air 5.59%, derajat keasaman (pH) 4.65, kelarutan 88.64%, derajat warna pada nilai L* 35.13, nilai a* 2.40, nilai b* - 11.93, aktivitas antioksidan 65.24%, dan nilai antosianin sebesar 77.60 mg/L. Kata Kunci: Bubuk Ekstrak Bunga Telang, Pengeringan Beku, Gum Arab, Mikroenkapsulasi Abstract – This research aims to determine the effect and best treatment of adding variations in gum arabic concentration on the characteristics of butterfly pea flower extract powder. This research used the Completely Randomized Design (CRD) method, with 5 levels of treatment varying the concentration of gum arabic (5%, 10%, 15%, 20% and 25%). The samples were repeated 4 times to obtain 20 experimental units. Data analysis was carried out using ANOVA analysis of variance at the 5% level to determine the effect between treatments. If data is obtained that has a real effect, then proceed with Duncan's New Multiple Range Test (DNMRT) at 5% level. The research results showed that the best treatment was obtained at a gum arabic concentration of 15% with a yield value of 73.16%, water content 5.59%, acidity degree (pH) 4.65, solubility 88.64%, color degree at L* value 35.13, a* value 2.40, b value * - 11.93, antioxidant activity 51.81%, and value of anthocyanin yield of 77.60 mg/L.
