Abstract

Abstrak - CPKO (Crude Palm Kernel Oil) merupakan minyak inti sawit kasar yang diperoleh dengan cara ekstraksi inti buah sawit secara mekanis. Tempat penyimpanan merupakan unit penting di semua pabrik kelapa sawit. Penurunan mutu umumnya terjadi selama penyimpanan dan pengiriman karena terjadinya reaksi oksidasi dengan oksigen diudara, dan reaksi hidrolisis. Semakin lama waktu penyimpanan minyak maka kemungkinan penurunan mutu yang akan terjadi semakin besar, suhu tempat penyimpanan yang tidak terkontrol juga menjadi salah satu penyebab turunnya mutu minyak. Mutu CPKO antara lain terdiri dari kadar asam lemak bebas, kadar air, dan kadar kotoran. Tujuan dari penelitian ini adalah untuk mengetahui pengaruh lama dan suhu penyimpanan CPKO terhadap perubahan kadar ALB, kadar air dan kadar kotoran. Berdasarkan hasil penelitian yang dilakukan lama dan suhu penyimpanan dapat mempengaruhi mutu CPKO, semakin lama waktu penyimpanan maka kadar ALB, kadar air dan kadar kotoran semakin meningkat, serta semakin tinggi suhu penyimpanan maka kadar ALB, kadar air dan kadar kotoran semakin rendah, CPKO dengan mutu terendah atau terbaik terdapat pada hari ke-1 dengan suhu penyimpanan 55℃ dengan nilai ALB 2,96%, kadar air 0,43%, dan kadar kotoran 0,87%. Kata Kunci: CPKO, Lama, Kadar ALB, kadar air, Kadar Kotoran, Suhu Abstract - CPKO (Crude Palm Kernel Oil) is crude palm kernel oil obtained by mechanical extraction of palm fruit kernels. The storage area is an important unit in all palm oil mills. Decreased quality generally occurs during storage and shipping due to oxidation reactions with oxygen in the air and hydrolysis reactions. The longer the storage time for oil, the greater the possibility of a decrease in quality that will occur. Uncontrolled storage temperature is also one of the causes of a decrease in oil quality. CPKO quality consists of, among other things, free fatty acid content, water content and dirt content. The aim of this research was to determine the effect of CPKO storage time and temperature on changes in ALB levels, water content and dirt content. Based on the results of research conducted, storage time and temperature can affect the quality of CPKO, the longer the storage time, the higher the ALB content, water content and dirt content, and the higher the storage temperature, the lower the ALB content, water content and dirt content, CPKO with the lowest quality or best quality was found on day 1with storage temperature of 55℃ with an ALB value 2,96%, water content of 0,43%, and dirt content of 0,87%.
