Abstract

ABSTRAK – Penelitian ini bertujuan untuk mengetahui tahapan proses produksi dodol kentang, mengidentifikasi limbah, sumber terbentuknya limbah dan limbah yang dihasilkan, dan untuk mengetahui alternatif solusi penerapan produksi bersih dilihat dari kelayakan teknis dan kelayakan finansial. Metode penelitian yang digunakan yaitu deskriptif dan pendekatan empiris. Proses produksi terdiri dari pencucian, perebusan, pengupasan kulit kentang, penggilingan kentang, pemarutan kelapa, pemasakan, pencetakan, pemotongan, pengemasan. Bahan baku kentang 50 kg dapat menghasilkan 139,54 kg dodol kentang. limbah padat berupa kulit kentang dan kentang rusak/busuk 15,32 kg/hari, abu sisa pembakaran 9,4 kg/hari, tempurung kelapa 10 kg/hari. Sedangkan limbah cair berupa air pencucian peralatan 90 liter/hari, air pencucian kentang 190 liter/hari, air sisa rebusan 12 liter/hari, air perendaman peralatan 90 liter/hari. Alternatif produksi bersih yang disarankan yaitu meminimalisasi penggunaan air pada proses cleaning ruang produksi, Good House Keeping, pembuatan kompos dari kulit kentang dan kentang yang telah rusak/busuk, penjernihan air, pemanfaatan abu kayu bakar menjadi abu gosok, pemanfaatan limbah padat tempurung kelapa menjadi arang tempurung kelapa, penanganan limbah gas (asap) dengan pembuatan corobong asap. Kata Kunci: Net Production; Potato Lunkhead; Financial Faasibility and Financial Technikal ABSTRACT – This study aims to determine the stages of the potato dodol production process, identify waste, sources of waste formation and waste produced, and determine alternative solutions for implementing clean production in terms of technical feasibility and financial feasibility. The research method used is a descriptive and empirical approach. The production process consists of washing, boiling, peeling potatoes, grinding potatoes, cooking coconut, molding, cutting, packaging. From 50 kg of potato raw materials, 139.54 kg of potato dodol can be produced. Solid waste in the form of potato skins and damaged/rotten potatoes 15.32 kg/day, ash from combustion 9.4 kg/day, coconut shells 10 kg/day. While liquid waste in the form of equipment washing water 90 liters/day, potato washing water 190 liters/day, boiled water 12 liters/day, equipment soaking water 90 liters/day. The recommended clean production alternatives are minimizing water use in the production room cleaning process, Good House Keeping, making compost from potato peels and damaged/rotten potatoes, water purification, utilizing firewood ash as scouring ash, utilizing solid coconut shell waste as coconut shell charcoal, handling gas waste (smoke) by making a chimney. .
