Abstract
Abstrak-Penelitian ini bertujuan untuk mengetahui proses produksi abon ikan patin di IRT Gerai Amanah saat ini untuk mengevaluasi sejauh mana persentase penerapan dari aspek kriteria Cara Produski Pangan yang Baik (CPPB) dan memberikan rekomendasi perbaikan yang dapat diterapkan di IRT Gerai Amanah. Penelitian ini menggunakan metode deskriptif dengan pendekatan kualitatif, jenis dan sumber data yang digunakan adalah data primer dan data sekunder. Metode pengumpulan data yang dilakukan yaitu riset lapangan (pengamatan dan wawancara) dan riset pustka. Terdapat 5 tahapan penelitian yaitu, 1)Identifikasi Kondisi IRT Gerai Amanah. 2)Penilaian penerapan CPPB-IRT. 3)Penentuan level IRTP berdasarkan CPPB-IRT. 4)Identifikasi penyebab permasalahan pada ketidaksesuaian minor, mayor, serius dan kritis. 5)Rekomendasi perbaikan. Berdasarkan hasil penelitian proses produksi abon ikan patin dimulai dari pencucian, perendaman, pengukusan, penyiangan, pencampuran, penggorengan, pemisahan minyak dan pengemasan. Persentase penerapan aspek kriteria CPPB dengan total jumlah persyaratan 149, persyaratan terpenuhi sebanyak 134 dan persyaratan tidak terpenuhi 15. Sehingga didapatkan persentase persyaratan sesuai mencapai 89,93% dan persyaratan tidak sesuai adalah 10,07%. Hasil penilaian level IRT Gerai Amanah berada pada level IV yang berarti perlu dilakukan peninjauan ulang dengan frekuensi audit setiap hari. Rekomendasi perbaikan yang diberikan kepada IRT Gerai Amanah adalah menyediakan ruang untuk makan dan minun karyawan, diberlakukannya peraturan kepada karyawan untuk menggunakan pakaian lengkap saat proses produksi, sediakan fasilitas berupa masker dan tempat sampah yang tertutup. Kata Kunci: Abon Ikan Patin, CPPB, Rumah Tangga Industri Abstrac-This study aims to determine the current process of catfish floss production at IRT Gerai Amanah to evaluate the extent to which the percentage of implementation of the criteria for Good Food Production Methods (CPPB) and provide recommendations for improvements that can be applied at IRT Gerai Amanah. This study uses a descriptive method with a qualitative approach, the types and sources of data used are primary data and secondary data. The data collection methods used are field research (observation and interviews) and library research. There are 5 stages of research, namely, 1) Identification of IRT Gerai Amanah Conditions. 2) Assessment of the implementation of CPPB-IRT. 3) Determination of the IRTP level based on CPPB-IRT. 4) Identification of the causes of problems in minor, major, serious and critical non-conformities. 5) Recommendations for improvement. Based on the results of the study, the production process of catfish floss starts from washing, soaking, steaming, weeding, mixing, frying, separating oil and packaging. The percentage of implementation of CPPB criteria aspects with a total of 149 requirements, 134 requirements were met and 15 requirements were not met. So that the percentage of appropriate requirements reached 89.93% and the requirements were not in accordance with 10.07%. The results of the IRT Gerai Amanah level assessment are at level IV, which means that a review needs to be carried out with an audit frequency every day. The improvement recommendations given to the IRT Gerai Amanah are to provide a space for employees to eat and drink, enforce regulations for employees to wear complete clothing during the production process, provide facilities in the form of masks and closed trash cans.
