Abstract

ABSTRAK Sistranafya, Iky, 2021. “Analisis Pencapaian Kompetensi Tata Boga pada Siswa Kelas XI Tata Boga SMK Negeri 4 Kota Jambi Melalui Pembelajaran Jarak Jauh”, Program Studi Magister Teknologi Pendidikan, Pascasarjana Universitas Jambi, Pembimbing I. Dr. Sofyan, M.Pd., Pembimbing II. Prof. Dr. Dra. Nazurty, M.Pd. Kata kunci: Kompetensi Keahlian Tata Boga Melalui Pembelajaran Jarak Jauh Penelitian ini bertujuan untuk mediskripsikan pelaksanaan praktik Tata Boga dan proses pembelajaran pada masa pandemi COVID-19 di kelas XI Tata Boga SMK Negeri 4 Kota Jambi. Penelitian ini menggunakan metode kualitatif dengan jenis penelitian fenomenologi memahami suatu objek atau peristiwa dengan mengalaminya secara sadar. Teknik yang digunakan adalah teknik purposive sampling dengan Non-Probability Sampling, instrument penelitian yang digunakan yaitu observasi, wawancara, dan dokumentasi. Untuk pengumpulan data peneliti melakukan observasi langsung, mewawancarai narasumber sebanyak 4 orang yang terdiri dari 2 orang siswa kelas XI Tata Boga 3 dan 2 orang siswa kelas XI Tata Boga 4, dan selanjutnya peneliti mengambil dokumentasi penelitian, seperti foto kegiatan monitoring guru ke tempat prakerin siswa, jurnal kegiatan prakerin siswa, dan buku catatan kegiatan pelatihan siswa prakerin di dunia usaha dan dunia industri. Selama pelaksanaan praktik kompetensi Tata Boga dimasa pandemi COVID-19 siswa diminta untuk membuat video proses pengolahan makanan dan minuman. Hasil dari pembuatan video praktik kompetensi Tata Boga tersebut dikirim melalui whatsapp atau google classroom ke guru produktif yang mengajar. Hasil dari wawancara yang telah dilaksanakan siswa menggunakan aplikasi online dan media alat handphone selama Pembelajaran Jarak Jauh di masa pandemi covid-19.   ABSTRACT Sistranafya, Iky, 2021. “Analysis of Achievement of Culinary Competence in Class XI Culinary Class Students at SMK Negeri 4 Jambi City Through Distance Learning”, Master of Educational Technology Study Program, Postgraduate University of Jambi, Advisor I. Dr. Sofyan, M.Pd., Advisor II. Prof. Dr. Dra. Nazurty, M.Pd. Keywords: Competence of Catering Skills through Distance Learning This study aims to describe the implementation of culinary practices and the learning process during the COVID-19 pandemic in class XI of Catering at SMK Negeri 4 Jambi City. This study uses a qualitative method with the type of phenomenological research to understand an object or event by experiencing it consciously. The technique used is a purposive sampling technique with Non-Probability Sampling, the research instrument used is observation, interviews, and documentation. For data collection, the researchers conducted direct observations, interviewed 4 resource persons consisting of 2 students of class XI Catering 3 and 2 students of class XI Catering 4, and then the researchers took research documentation, such as photos of teacher monitoring activities at the student prakerin place. , a journal of student prakerin activities, and a record book of student prakerin training activities in the business and industrial world. During the implementation of the Catering competency practice during the COVID-19 pandemic, students were asked to make a video of the food and beverage processing process. The results of the video making of the Catering competency practice are sent via whatsapp or google classroom to productive teachers who teach. The results of interviews that have been carried out by students using online applications and mobile phone media during Distance Learning during the covid-19 pandemic.
