Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh jenis bahan alat pemanas terhadap sifat fisik dan kimia seduhan teh daun sungkai serta menentukan alat pemanas terbaik untuk menghasilkan kualitas teh optimal. Penelitian dilakukan Mei–Juni 2025 di Laboratorium Universitas Jambi menggunakan RAL dengan empat jenis bahan alat pemanas (aluminium, stainless steel, gerabah, dan teflon) yang diulang empat kali. Parameter yang diamati meliputi waktu pemanasan, rendemen, warna, pH, dan TPT air seduhan teh daun sungkai. Analisis data menggunakan ANOVA dan uji DMRT 5% dengan bantuan SPSS 20. Hasil penelitian menunjukkan bahwa Jenis bahan alat pemanas tidak berpengaruh nyata secara statistik terhadap warna, pH, dan Total Padatan Terlarut (TPT) air seduhan teh daun sungkai, meskipun terdapat variasi nilai antar perlakuan. Aluminium merupakan alat pemanas terbaik dalam menghasilkan teh daun sungkai dengan aktivitas antioksidan yang lebih tinggi, ditunjukkan oleh nilai TPT tertinggi (0,42 °Brix) dibanding bahan pemanas lainnya. Abstract: This study aims to determine the effect of different heating equipment material types on the physical and chemical properties of Sungkai leaf tea infusion, as well as to identify the best heating material for producing optimal tea quality. The research was conducted from May to June 2025 at the Laboratory of Jambi University using a Completely Randomized Design (CRD) with four types of heating materials (aluminum, stainless steel, earthenware, and Teflon), each replicated four times. The observed parameters included heating time, yield, color, pH, and total dissolved solids (TDS) of the Sungkai leaf tea infusion. Data were analyzed using ANOVA and the 5% DMRT test with the help of SPSS 20. The results showed that the type of heating equipment material had no statistically significant effect on the color, pH, or total dissolved solids (TDS) of the Sungkai leaf tea infusion, although there were value variations among treatments. Aluminum was identified as the best heating material for producing Sungkai leaf tea with higher antioxidant activity, as indicated by the highest TDS value (0.42 °Brix) compared to other heating materials.
