Abstract

ABSTRAK Penelitian ini bertujuan untuk mengetahui kajian pascapanen dan mutu biji kopi robusta di desa Batu Jungul kecamatan Muara Pinang Kabupaten Empat Lawang Sumatera Selatan. Rancangan penelitian ini merupakan penelitian survei untuk mendeskripsikan teknik penanganan pascapanen serta mutu beras kopi asal provinsi sumatera Selatan. Di setiap lokasi data diambil dengan metode Purposive Sampling. Hasil pengamatan di lokasi sentra produksi kopi tahapan proses pascapanen yang dilakukan yaitu panen, cara pengolahan, pengeringan, alat pengolahan dan pengemasan. Dari 3 Dusun pada Desa Batu Jungul didapatkan bahwa pada Dusun 1 proses pemanenan sudah efektif yaitu panen selektif (petik merah), sedangkan Pada Dusun 2 dan Dusun 3 proses pemanenan kopi masih menggunakan metode rajutan, proses pengolahan kopi pada dusun 1, dusun 2 dan dusun 3 tidak adanya sortasi buah kopi dilanjutkan pengeringan dengan sinar matahari, pemisahan kulit kopi menggunakn mesin yaitu Huller, tahap terakhir adalah pengemasan kopi beras dengan karung. Biji kopi dari Dusun 1 dan Dusun 2 merupakan kopi dengan kualitas 4b sedangkan biji kopi Dusun 3 didapatkan hasil kualitas mutu V, jenis kopi yang digunakan adalah kopi robusta. Hasil uji kadar air didapatkan 11% untuk Dusun 1, 10% untuk Dusun 2 dan 11% untuk Dusun 3. Kata Kunci :Kopi Robusta, Mutu biji kopi , Pascapanen. ABSTRACT This research aimed to determine post-harvest studies and the quality of robusta coffee beans in Batu Jungul village, Muara Pinang sub-district, Empat Lawang Regency, South Sumatra. This research design is a survey research to describe post-harvest handling techniques and the quality of coffee rice from South Sumatra province. At each location the data was taken using the Purposive Sampling method. The results of observations at the location of the coffee production center, the stages of the post￾harvest process carried out, namely harvesting, processing methods, drying, processing equipment and packaging. From the 3 hamlets in Batu Jungul Village, it was found that in Hamlet 1 the harvesting process was effective, namely selective harvesting (red picking), while in Hamlet 2 and Hamlet 3 the coffee harvesting process still used the knitting method, the coffee processing process in Hamlet 1, Hamlet 2 and Hamlet 3. There is no sorting of the coffee fruit, followed by drying in the sun, separating the coffee skins using a machine, namely a Huller, the final stage is packaging the rice coffee in sacks. The coffee beans from Dusun 1 and Dusun 2 are 4b quality coffee, while the Dusun 3 coffee beans are of V quality, the type of coffee used is robusta coffee. The water content test results were found to be 11% for Hamlet 1, 10% for Hamlet 2 and 11% for Hamlet 3. Keywords: Robusta coffee, quality of coffee beans, post-harves
